Gastronomy

Fourtalia is the island’s specialty. It is an omelette with roundly sliced potatoes and traditional locally produced sausages, all cooked in pork fat (glina).

The traditional sausages are from pork and their baking in the glin is what gives them the special flavor. Also, spices and herbs such as oregano, mint, marjoram, salt and pepper can be added.
Another traditional dish of the Andrian cuisine is the “lambriatis“. It is cooked in Easter and it is a stuffed goat that is baked in a large baking dish, usually on woods, usually in a wood oven!

Other famous local products are “amigdalota”, “pastitsia”, pastels and “kaltsounia”, which are found in all the confectioneries of the island.
